McCoy was the MIAA Offensive Player of the Year in 1999 after setting a then MIAA regular season records with 1,277 receiving yards and 16 touchdown catches for the Hornets. He was named All-American as a junior and senior. He holds ESU career records with 3,213 receiving yards and 33 touchdown receptions. A two-sport athlete, McCoy also played 42 games in three years for Hornet basketball team with nine starts. Since graduation he has established the "Fit For Life Athletic Ministry."
